This week, I found myself in need of a quick dessert for a graduation celebration. With limited time, I threw together a batch of cupcakes that, despite being a bit rushed, turned out quite nicely.
I kept the cupcakes simple: a classic vanilla base topped with a swirl of icing. While my icing recipe is tasty, I’ll admit it’s not the easiest to pipe onto cupcakes. If anyone has a reliable icing recipe that’s both delicious and easy to work with, please share it with me!
Even though they were a last-minute effort, the cupcakes looked festive and celebratory. Sometimes, it’s the thought and effort that count the most. They were well-received, and I’m glad I managed to add a sweet touch to the occasion.
